The new Jing restaurant at The Peninsula Beijing is a contemporary “Farm-to-Table” venue with a stylish design evoking a mystical Chinese garden. To meet the increasing demand in China for healthy dining, Chef Alberto focuses on “farm-to-table” gastronomy, working with more than 20 carefully selected farms near Beijing and across China, all fully certified by the Chinese or the US Government, and visited on a regular basis to ensure the quality of the ingredients. These local producers supply traceable, sustainably produced and predominantly organic vegetables and fruits on a seasonal basis, ranging from onions, garlic and carrots to wasabi, white asparagus and sweet potato, while the hotel’s own on-site greenhouse cultivates fresh herbs to garnish the signature recipes created by Chef Alberto and his team.
